Easter Springtime Cookies

These beautiful Easter cookies are both easy and fun to make. They are colorful and delicious and so so much fun to decorate! You can use everything from simple pastel colored frosting to sprinkles, shredded coconut, even pastel candies like M&M’S or jelly beans! Here you are only limited by your imagination and this is a great one for the little ones!

Easter Springtime Cookies

Makes 2 Dozen

Ingredients

2 sticks unsalted butter, softened

1 cup of sugar

1 large egg

1 teaspoon orange extract

1/2 teaspoon salt

2 1/2 cups all purpose flour

1 1/2 teaspoon baking powder

 

Directions

Preheat oven to 325 degrees

1. In a stand mixer with paddle attachment, combine butter, sugar and salt, and cream the butter until smooth.

2. Add the eggs, and continue mixing.  Slowly add the flour one cup at a time.  Add the baking powder and continue mixing until combined well.

3. Remove from mixer and form the dough into a disk.  Cover with plastic wrap and place in the refrigerator for one hour.

4. Sprinkle some flour on a work surface and roll out the dough to 1/4-1/2 inch thickness.  Use various cookie cutters to create your shapes.

5. Place the cookies on a non stick baking tray and place in the oven for 10 minutes, or until golden.

6. Set aside on a wire rack to fully cool.  Once cooled use various icings and sprinkles to decorate.
